Broccoli Gratin

Good afternoon y’all, I hope each of you are having a wonderful day. It’s damp and dreary here which has made me a bit lazy today. Earlier last week I fixed this broccoli gratin and it turned out really good. We love all sorts of broccoli casseroles but I just wanted something a little different so this is what I came up with. After a few bites I realized this sure would be good over a big ole baked potato, so that’s the plan next time I make it.

It’s days like today that make me just want to slow down a spell and enjoy the day. I’ve been Winter prepping the past few days and have had every room in the house tore up with moving things around, hanging up the heavier drapes, swapping out Summer for Winter clothes, etc. and I’m dog tired so today I’ve been lazy. After getting Zaylee’s schooling done this morning I let her pick out a movie and being still in our PJ’s we just snuggled on the couch under blankies and I even got a little nap in. I threw a pork loin in the crock pot for bbq this evening so I really haven’t lifted much of a finger today and it sure has felt good. I can remember Nannie Polly having lazy days when it was damp and dreary. They had dark paneling in the living room and she never turned on a lamp so it was especially dark. She’d pull out one of her quilts and in between breakfast, dinner and supper we just sat under that quilt and watched Family Affair along with her stories. She was a big As The World Turns fan and tried not to miss an episode. She did most of the watching as I would end up with my head in her lap and go sound asleep.

Broccoli Gratin – Broccoli Gratin

Ingredients

  • 2, 12 oz. pkgs. frozen broccoli florets, thawed
  • 4 T. butter
  • 1/2 C. finely chopped onion
  • 1 clove garlic, minced
  • 4 T. all purpose flour
  • 1 1/3 C. milk
  • 1/2 C. chicken broth
  • 2 C. shredded cheddar cheese
  • 1/4 C. grated parmesan cheese
  • 1/4 tsp. mustard powder
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. salt
  • good pinch each of cayenne pepper and black pepper

Instructions

Melt the butter in a good size pot over medium high heat. Add the onion and cook for 3 minutes, add the garlic and cook for about 30 seconds. Whisk in the flour and cook about 45 seconds then begin whisking in the milk and broth. Bring up to a low boil and cook till it has thickened enough to coat the back of a spoon. Remove from the heat and stir in the remaining ingredients along with the thawed broccoli. Pour into a lightly greased 2 quart baking dish and make the topping.

2 T. butter, melted
3/4 C. panko breadcrumbs
2 T. grated parmesan cheese
1/4 tsp. smoked paprika

Combine together and then sprinkle over the top of the broccoli mixture..

Cover with foil and bake in a 350 degree oven for 25 minutes. Uncover and bake for 20 more minutes. Allow this to sit for 5 minutes before serving.
